Your opening plan at a glance

  • Create separate purchasing lists for cooking, washing, service and storage areas.
  • Match appliances to your menu and quantities to your busiest service.
  • Check that plates, trays, baskets and GN containers fit the systems they will be used with.
  • Separate opening purchases from additional quantities to be decided after a trial service.
What is in this guide?

Opening purchases involve more than large kitchen appliances. Containers, serving utensils, washing arrangements and storage areas must work together to get food from the kitchen to the table. This guide helps you organise your requirements by working area with Ekmekçiler.

SECTION 01

How to use this checklist

First define your menu and service format. Then review each area separately, establishing when and how much you need rather than buying every item at once.

  1. Select what you need: Leave out products that your concept will not use.
  2. Plan quantities: Consider peak service, existing stock and the time needed to return washed items.
  3. Set the schedule: Separate opening essentials from later additions.

Purchasing priorities

Ready for opening: Appliances for the initial menu, essential serving utensils and cleaning arrangements.

Measure during service: Supporting utensils and spares to increase according to actual use.

Add as demand grows: Extra equipment for new offerings or seasonal service.

SECTION 02

Restaurant opening checklist

Tick completed items. Record the quantity, dimensions, supplier and expected delivery date in your own purchasing record. Assess menu-dependent options against your operation’s requirements.

SECTION 03

How many plates, glasses and cutlery items should you buy?

Calculate demand separately for each item type. Main-course plates, dessert bowls and espresso cups may not be used in equal numbers. Consider how many orders will need an item before it can be washed and returned to service. Then allow appropriate extra stock for selected items at risk of breakage or loss.

Planning example: Assume a restaurant with 40 seats expects to serve 60 main courses during one service. If the main-course plates will not be washed and reused during that service, the requirement is 60 plates in use. Adding six spares in this example produces a plan for 66 plates. This is not a fixed ratio for every operation: a different menu or washing arrangement changes the calculation.

Assess drinks orders for glassware and simultaneous place settings for cutlery separately. Rather than converting a machine’s catalogue capacity directly into an available plate count, allow for loading, unloading and returning clean items to their storage positions.

SECTION 04

In what order should restaurant equipment be purchased?

  1. Finalise the layout and appliance list first. Confirm models and dimensions for equipment involving utility connections, fabrication or delivery lead times.
  2. Match fixed work areas to the equipment. Dimension work tables, sinks, shelving and washing areas around the selected equipment.
  3. Physically test a sample service setting. Check plate, glass and cutlery samples together with tables, trays and washing baskets.
  4. Complete container and accessory orders. Order GN containers, trays, knives and appliance accessories against confirmed models and dimensions.
  5. Bring deliveries together before trial service. Record shortages in split deliveries and allow time for the team to learn and test the equipment.

SECTION 05

Check dimensions and system compatibility before purchasing

Plate → Basket → Shelf

Plate diameter and height should suit machine baskets, clean storage and serving trays.

Container → Oven → Worktop

Compare GN container and tray dimensions with those accepted by the appliance. Also check the space needed during preparation and handling.

Product code → Repeat order

Record collection, model and part codes. Discuss availability with the supplier so replacement or additional pieces can be identified.

SECTION 06

Common mistakes when buying restaurant kitchen equipment

  • Comparing prices alone: Quotations are not directly comparable if models, capacities, accessories and installation scope differ.
  • Choosing the largest capacity for everything: Equipment you do not use can reduce working and storage space.
  • Leaving dishwashing until last: The washing area is as much a part of opening preparations as the production line.
  • Not measuring the delivery route: Doors, stairs, lifts and turning spaces affect whether equipment can be moved into the premises.

SECTION 07

Validate your opening list during a trial service

Completing the list alone does not show that all equipment works well together. Before opening, test preparation, cooking, plating and washing using sample orders. Record missing pieces, delays and unnecessary purchases. Use the trial to finalise remaining orders.

Frequently asked questions

Which equipment groups should be planned for restaurant opening?Alongside cooking and refrigeration, assess preparation, containers and utensils, service, washing, storage and organisation. Add bar, takeaway and outdoor equipment only where your concept requires it.
How should plate and glass quantities be calculated?Consider menu usage, customer numbers during peak service and the time needed to wash and return items to use. Determine spare quantities separately for each product.
Which small items can be overlooked before opening?Compatible washing baskets, lids, appliance accessories, storage labels and service tools may be missed when attention is on larger appliances. Check these separately.
When should equipment orders be finalised?Once dimensions and utility connections are confirmed, agree delivery dates with suppliers. Plan for all critical items to be ready before opening so a trial service can be carried out.
